Early Red Radicchio, unlike Late Red Radicchio, matures in the open fields, after the leaves have been tied with elastic bands and held together tightly so as to keep out the light for 15-20 days.

Early Red Radicchio is a classic product of the rural culture in the Treviso area. It has an elongated head with tightly-packed, deep red leaves with white ribs. Thanks to its pleasingly bitter flavour and crunchy texture it features in many delicious traditional recipes.
